While the adage of wine being made in the vineyards rings true, it is a fact that a skilled winemaking team with access to the correct technology is necessary for expressing the grape varieties and their terroir into the best bottle of wine. Diemersdal’s cellar uses a combination of traditional wine-making techniques and state-of-the art scientifically researched methodology to gain the exact styles of wines required for the brand’s extensive range.

Certain red wines are fermented in open-top wood and concrete fermenters with regular manual-punch-downs to extract colour, tannin and flavour from the skins. Fine French oak barrels are used for aging and fermenting certain lines of Sauvignon Blanc, while other white wines are made in stainless steel tanks for upfront, bright accessibility with regular lees-stirring under temperature-controlled conditions.
