Cured with citrus, soy, ginger and chilli served with bonito mayo

Roasted Jerusalem artichoke, gruyere, cumin, pear, bone marrow

 Smoked Norwegian
salmon parfait, salmon ‘bacon’, tarragon, 60˚C egg yolk, dill, nasturtium

2 nd Course

Sous vide Duck breast, fennel Turkish delight, pistachio soil, charcoal tuile, ricotta

Beef fillet
Smoked and caramelised onion, toffee onion jus, charred broccoli

Asian braised greens
Charred sweet potato, shitake, black pepper, sesame, tosazu, leek

3 rd Course

Baked cultured cream
Water berry gelée, rose, white chocolate

Layered treacle pastry, muscovado caramel, vanilla ice cream
