Homemade Grape Ice Cream


1 1/2 cups cream
1 1/2 cups full-fat milk
3 tablespoons honey
1 1/4 cup sugar
1 1/4 cup green pitted grapes
4 egg yolks
a big pinch of salt
zest of half a lemon
chopped pistachios – serving

Preheat the oven to 180˚C.

Rinse the de-seed grapes under luke warm water.

Using a sharp knife, de-pip the grapes if they’re not seedless, and cut in halves.

Place the prepared grapes halves on a roasting pan, and roast them until the juice in the grapes starts bubbling and the skins starts pruning.

Combine the cream, milk, honey, salt, and half of the sugar in a large saucepan and simmer over medium heat until it starts to steam.

Whisk the yolks, rest of the sugar and the zest together.

Start pouring small amounts of the warm cream mixture to the yolk while continuously whisking. Pour the mixture back into the pot and cook over low heat for 5 minutes until it has thickened to a thin custard.

In a food processor, blend the roasted grapes until it forms a smooth pulp.

Whisk the grape pulp into the custard.

Pour the mixture in a large bowl, let it cool and freeze for at least 4 hours or overnight.

If you have an ice cream maker, simple chill the mixture in the fridge for a few hours and follow your machines instructions.

Sprinkle with chopped pistachios and enjoy!
